From the very beginning, we have been committed to uncompromising organic cultivation and certified farming in accordance with the EU Organic Regulation. Our organic extra virgin olive oil from Istria is harvested by hand with careful mechanical assistance and gently cold-extracted on the very same day – at temperatures not exceeding 22°C.
The early harvest gives the oil its distinctive, vibrant green-fruity character and ensures a naturally high concentration of polyphenols. These valuable antioxidants are a hallmark of exceptional quality, freshness, and nutritional value.
