Aromatic Harmony with TERRA ROSSA
The raw finishing touch of our organic extra virgin olive oil brings freshness to the rich structure of the beef. Its delicate bitterness adds length and balance to the jus, enhancing the overall depth of flavor.
Ingredients (Serves 4–6)
For the Roast
1.2–1.5 kg beef roast (e.g., chuck or rib roast)
6 tbsp TERRA ROSSA organic extra virgin olive oil
4 garlic cloves
3 sprigs fresh rosemary
2 sprigs fresh thyme
Zest of 1 organic lemon
2 tsp coarse sea salt
1 tsp freshly ground black pepper
For the Roasted Vegetables
3 carrots
2 red onions
1 fennel bulb
300 g small potatoes
3 tbsp TERRA ROSSA organic extra virgin olive oil
Sea salt
For the Olive Oil Jus
150 ml rich beef stock
100 ml dry red wine
2 tbsp cold TERRA ROSSA organic extra virgin olive oil (for finishing)
Preparation
1. Prepare the Beef
Remove the roast from the refrigerator one hour before cooking. Mix TERRA ROSSA organic olive oil with lemon zest, finely chopped rosemary, thyme, garlic, salt, and pepper. Rub the mixture evenly over the meat.
2. Sear the Meat
Heat a roasting pan and sear the roast on all sides until a rich brown crust develops.
3. Slow Roast
Cook in a preheated oven at 160 °C (320 °F) for about 90–120 minutes, until the internal temperature reaches 56–60 °C (medium-rare). Occasionally baste the meat with the roasting juices.
4. Roasted Vegetables
Roughly chop the vegetables, toss them with olive oil and salt, and roast them alongside the beef for about 40 minutes.
5. Olive Oil Jus (Signature Moment)
Reduce the beef stock and red wine in a saucepan.Remove from heat and whisk in 2 tbsp cold TERRA ROSSA olive oil to emulsify. Do not boil—simply incorporate gently.This step gives the jus freshness, structure, and elegant length.
